Healthy living in Africa Campaign : Soghum | Nestlé

The recommended daily intake of protein is about 56grams for the average non-athlete male and 46grams for women. In West and Central Africa many of the diets include a lot of protein so people in the region often get enough of it from their food. A quick and healthy high protein food you can make quite easily is Sorghum. Sorghum is a gluten-free cereal rich in protein and starch. Also rich in iron, calcium and phosphorus, Sorghum helps fight several gastrointestinal illnesses. In Ivory Coast the highly nourishing Sorghum flour is used to prepare a quick porridge. The fairly consistent porridge is then cut into small spoon shaped portions called "toho" that are served warm with sauce made from tomatoes, onions, peppers and okra. Cooked with milk, this porridge (baca) serves as breakfast for the family.
