To make this low salt dish, cut up the bananas. First in half and then into four pieces, lengthwise, you should end up with 32 French fry sized pieces. Place the pieces in a large bowl and drizzle them with lemon juice to prevent browning and let it set for 5 minutes. Fill a frying pan with about half an inch of peanut oil and heat up on medium-heat. Put the crushed corn flakes in a bowl and roll the banana pieces around until each piece is well covered. Fry the banana pieces in the skillet until golden brown on each side. Sprinkle with either pepper or a mix of cinnamon & sugar, depending on whether you want them sweet or spicy. Makes a great side dish or for breakfast.
MAKES: 4 servings Ingredients:
• 4 medium bananas
• 2 or 3 tablespoons of fresh lemon juice
• 3/4 cup of finely crushed corn flakes
• Peanut oil for frying
• Black pepper (spicy) - optional
• Cinnamon & sugar (sweet) - optional
